Here's a refreshing summer salad recipe that’s light, colorful, and bursting with flavor—perfect for hot days:

Ingredients:

  • 3 cups watermelon, cubed and chilled
  • 1 large cucumber, thinly sliced (English cucumber works well)
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice (or lemon juice)
  • Salt and pepper to taste
  • Optional: toasted pumpkin seeds or basil leaves for garnish

Instructions:

  1. Prepare ingredients: In a large bowl, combine cubed watermelon, sliced cucumber, and red onion.
  2. Add cheese and herbs: Gently fold in crumbled feta and chopped mint.
  3. Dress the salad: Drizzle with olive oil and lime juice. Season with salt and pepper to taste.
  4. Toss & chill: Lightly toss everything together. Chill for 15–20 minutes if desired.
